Cowboy Cobbler


  • 1 quart Tomatoes
  • 2/3 cup Sugar
  • 1 tsp. Nutmeg
  • Pie crust

     Cut tomatoes in small pieces and mix with sugar, nutmeg.  Rinse jar with 1 cup water.  Add this water to the mixture and stir.  Put half of mixture in 1 1/2 quart casserole dish. 

HERE YOU HAVE A COUPLE OF OPTIONS for the crust:

Roll pie crust into a thin sheet and fit to bottom of pan.  Add tomato mixture.  Then roll crust thin and place on top to fit to dish. 

OR instead of crust, pinch dough into small dumplings and sprinkle over mixture. 

Bake at 350^F for 25-30 minutes.

Ranchwoman’s Cobbler


  • 2 cups Flour
  • 2 cups Sugar
  • 1 tsp. Salt
  • 3 tsp. Baking Powder
  • Water for batter
  • 1 gallon Fruit, cherries are preferred but any fruit will do
  • Lemon juice and sugar to taste

     In a large cobbler pan or medium Dutch oven, stir all dry ingredients.  Add enough water to make a thick batter.  Spread evenly.  Drain juice from the fruit and add a little salt, lemon juice and sugar to make juice taste good.  Spread fruit on the batter and pour juice over it.  Bake at 350^F for 1 hour.

     If you use a Dutch oven and cook outdoors, live coals are put on the lid until the cobbler begins to puff up and gets a little brown.  Take coals off the lid and continue cooking slowly.

Corn Pudding


  • 3 tbls. Sugar
  • 1 1/2 tbls. Cornstarch
  • 1 cup Milk
  • 3 Eggs, beaten
  • 10 oz. Cream Corn
  • 2 tbls. Butter, melted
  • 1/2 tsp. Salt
  • Dash Nutmeg

     Mix sugar and cornstarch, gradually add cold milk, stirring until smooth.  Add eggs, corn, butter and salt.  Mix well and pour into 1 quart baking dish.  Sprinkle with nutmeg.  Place dish in pan of hot water.  Bake at 300^F for 1 hour 45 minutes until set.

Oatmeal Pie


This tastes pretty close to Pecan Pie.

  • 2 Eggs, beaten
  • 1 1/2 cups Milk
  • 1 cup Sugar
  • 1/2 tsp Vanilla
  • 3/4 cup Dark Karo Syrup
  • 1/4 cup Butter, melted
  • 1/2 cup Cocunut
  • 3/4 cup Oatmeal
  • 1 9″ Unbaked Pie Shell

     Mix all ingredients and pour into pie shell.  Bake at 350^F for 1 hour or until knife comes out clean.

Buttermilk Pie


  • 3 3/4 cup Sugar
  • 1/2 cup Flour
  • 6 Eggs, beaten
  • 1 cup Butter, melted
  • 2 cups Buttermilk
  • 1 tbl. Vanilla
  • 2 – 9″ Unbaked Pie Shells

     Mix all ingredients well and pour into unbaked pie shell.  Bake at 325^F for 1 hour or until golden brown.

Makes two 9″ pies.
