Mountain Oysters and Sweetbreads

Alright, I’ve had many requests for this recipe.  So after much research, I’ve found one that will satisfy even the most unusual of the unusual recipe seekers.

Now, if you don’t know what Mountain Oysters (also known as Prairie Oysters) are, I highly suggest you look this up before you decide to make them.  And yes, you’re probably going to be shocked when you find out what they are. 

I know what they are, and will tell you they are a delicacy enjoyed by many cowboys at branding time. 

You made it!  I’m proud you found your adventurous side. 😀  Alright, let’s get on to the recipe.

Mountain Oysters and Sweetbreads

  • 1 pr. (they come in pairs :P) Bull Testicles
  • Neck Gland of young calf (this is found in most but not all calves)
  • Flour
  • 1 Egg, beaten*
  • 1/2 cup Milk*
  • Cracker crumbs
  • Shortening

Partially freeze oysters and sweetbreads.  Skin oysters and slice oysters and sweetbreads 1/4″ thick.  Soak overnight in water mixed with salt and garlic salt.  Drain and dip in flour, then *milk-egg mixture, then cracker crumbs.  Fry in deep, hot shortening.

Serve with Picante’ sauce, salsa or other dipping sauce of your choice.

*I need to note here that 1 egg should be used for every 1/2 cup of milk.
