Mexican Lasagna

Here’s another quick and easy recipe, that I think would be great to get the kids in the kitchen.  If you thought the kids did great at making their own pizzas……… give this one a try!

I must say, I’ve had some real doozies of mistakes in the kitchen.  However, I’ve been able to pull it all together and make it look like I meant it to turn out that way. 😛  shh – that’s our secret.

This recipe will take about 35 minutes total from start to finish.  I say win/win there!

Mexican Lasagna

  • 2 lbs. Ground Beef (or Ground Turkey)
  • 1/2 c. Chicken Broth
  • 10 Flour tortillas
  • 1 jar (16 oz) Pace Picante Sauce
  • 1 pkg (16 oz) Shredded Mexican Cheese
  • 1 container (8 oz) Sour Cream
  • 1 can (4.5 oz) Chopped Green Chilies
  • Salt and Pepper to taste

Preheat oven to 375°F.

Coat 2 cake pans (or 1 big one) with vegetable cooking spray.  In a large skillet, cook beef (or turkey) until browned.  Season with salt and pepper.

Pour broth into a large shallow bowl, and soak tortillas (about 5 minutes).  Set aside 1/2 cup salsa and 1 cup cheese.

To layer:  Place one tortilla on the bottom of each pan (or the 1 big one).  Follow with sour cream, chilies, browned meat, salsa, and shredded cheese.  Top with tortilla, and repeat.  Finish with a tortilla on the top.

When finished layering, put reserved salsa and cheese on the top.

Cover with aluminum foil, and bake for 30 minutes until bubbling.

Serve hot.

    Sounds delicious! Of course with me anything with a container of sour cream is good though! lol. Will defiantly have to try this recipe out soon! Hmm, I wonder if I could make this in a slow cooker…
