Well it’s that time of year again. School is gearing up for most of the kids, and summer is coming to an end. But there’s no need to put away the grill just yet! There’s still plenty of warm weather, and plenty of family gatherings to share before summer comes to a close.
Here’s is a great recipe that has been around the table at our house a couple thousand times. I’d like to share it with you, in the spirit of keeping those summer memories coming on strong.
This recipe is also easily adaptable to the grill or crock pot too!
Three Cheese Italian Style Chicken Rigatoni
- 12 oz. Uncooked Rigatoni
- 3 cups Fresh Broccoli florets
- 1 medium Red Bell Pepper, chopped
- 1 pkg Three Cheese Italian Style Chicken Sausage, sliced (Johnsonville is my choice for this recipe)
- 1/2 cup Italian Dressing
- Grated Romano or Parmesan Cheese
Cook rigatoni according to package directions in a large saucepan; add broccoli during the last 3 minutes of cooking time. In a large skillet, combine sausage, red bell peppers and italian dressing; cook over medium heat until heated through. Drain pasta and broccoli; transfer to a large bowl. Add sausage mixture; toss to combine. Sprinkle with cheese.
